Dieting is Out; Mindful Eating is In

How would you like to stop counting calories or carbs or anything else that ties you down and doesn’t really let you enjoy a hearty serving of anything healthy that you like to eat?  Research shows that the number of people on a “diet” has decreased dramatically in the past 10-15 years and has been replaced with heathy eating, something I like to call Mindful Eating.

After years of trying all the “diet of the day” programs, I decided 4 years ago to use the online Weight Watchers daily planner that included great healthy recipes. After about 3 months, I unsubscribed and started using a free application called “Fitness Pal”. This app tracked how much exercise I did and what I ate, including 1,000’s of very specific dishes from popular large chain restaurants. It would let me know if I was not exercising enough or was eating too many carbs, fat, protein or sugar.

A great tool for sure, but pretty soon it was just second nature to order brown rice, or to cook with whole wheat flour or to buy lean proteins and look for low glycemic sweetener’s. I tried them all and eventually settled on Agave Nectar for cooking and in the last three weeks, now Agave goes in everything from hot tea to iced tea.

The starting point may seem extreme;  you must remove anything from your house that has preservatives, high fructose corn syrup, fatty foods, candy, bags of chips and all white carbs, (white rice, white potatoes, white pasta, white bread) and your private little stash of naughty nibbles.

I will include a recipe each week with words of encouragement to those of you that struggle with your weight or body image. Buy a lovely small journal that feels comfortable in your hands, just like the two I found at Barnes and Noble.  Find a quiet place each evening, and write down in your journal what you where feeling after you ate your breakfast, lunch and dinner, or even after that candy bar you gobbled up in the car. Be brutally honest with yourself, and eventually your ideal individual health plan will develop in front of your own eyes.

Once we push “Diet” out the window, and just start eating healthy foods that make us feel happy inside, the weight will start coming off very slowly, sometimes taking a long time, but you will keep it off forever, I promise!

Oatmeal Snack Cookies
1/2 cup coconut oil
3/4 cup agave nectar
2 eggs
1 tsp vanilla
1 1/2 cup whole wheat flour
1 3/4 cup oatmeal flakes
1/4 cup flax seed
1/4 cup coconut flakes
1/2 cup roasted pecans
1/4 cup raisins
1/4 cup dried cherries
1/4 chopped apricot
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
Mix the first 4 ingredients until blended, then throw everything else into the bowl until completely blended. You will need to do this by hand. It will make 24 cookies. They will not flatten at all, so you can put them fairly close on the cookie sheet. Bake at 325 for 12-14 minutes. So yummy for an any time snack with some low fat milk!
